I normally don't skip the opening, just because I always skip to the wrong spot if I do and think I miss something important. Nothing really happens after the ending so no point in watching it.

I'd like to point out that sometimes there are scenes after the ED or during it. Even if you skip it, it's best to double-check.

If I'm watching a running anime, I'll watch the OP/ED. If I'm watching a completed anime, I'll probably skip them after a while.

Depends on how good the OP/ED is. Also, sometimes there's recaps in the OP (see Durarara) or conclusions to episodes in the ED (see Ano Hana).
