I had someone send me some LTC and so far after ~20mins it still even shown on my wallet as unconfirmed.
How long does this usually take to even show as unconfirmed.
I am using Litecoin-QT (which is updated to the latest block and has a healthy connections to 11 peers)

Check the blockchain to see if it has sent from their address yet. If it has, make sure it went to your address and not some other address by mistake.

And enter his address where it says search. Or even you address to see if your wallet is just behind.
