I'm quite new to website hacking, i can do the basics for SQL injection, but what do people use/do to deface a website?🤝

They obtain file writing access into the document root of the website. That is done by either obtaining administrator creditials to a control panel with file writing access / indirect hack through a different *nix box escalating it's read&write privilege / exploiting a certain vulnerability within the web application hosted at the website.
