I have access to the main email to the skype account I want to get into
but i do not want to reset the password, I want to be able to log in from phone/computer and monitor conversation on the skype account.
Is there anyway I can somehow get the accounts password - without resetting it?
and help/suggestions greatly appreciated! Thanks.

Both Instagram & Skype password can be obtained without resetting it.

No, it isn't possible.
The password is stored encrypted within a database, and they can't send you the password in plaintext.
You'll have to reset the password.

If you can keylog the victim then you could get the password that way.
