Is there a payment processor that will accept payments like paypal, bitcoin, etc that will only pay me in bitcoins? For example I want to sell an ebook and do not want anything but bitcoin in return for this ebook, while also wanting people who can only with credit card/paypal be able to buy the ebook? Is there a site that can do this?

You'd need an exchange for that and since no one instant exchanges random cards or PayPal then no.
You can accept Bitcoin only on rocketr if you like

Nothing like that.
A member tried to offer such service back in 2014. Worked great for a while but eventually he ran into problems.
