It's all in the title pretty much, is there a way for me to remotely access that PC without the person knowing it ? Thanks!

If you are able to access it physically without the target knowing, you could be able to plug in a USB stick that contains malware of your choice that can give you a backdoor into the system. If you'd rather not code your own backdoor/remote shell, you can use Metasploit or another tool, however if AV is present on the system there is a high chance of it being detected. Therefore I would advise you to create your own tool. You could also use a USB rubber ducky, or a makeshift one (such as using an arduino pro micro) to quickly download/install some software that will give you a backdoor onto the system. A reverse shell would also remove the possibility that the firewall on the targets computer is set up not to let out any connections to foreign addresses.
