Sorry to break it to you but it's very possible, the same way you would gain access to files on someone's PC. It's called a RAT. The one that I use is called AhMyth. It doesn't get along with Windows though, so, if you're serious about doing this then you might want to get acquainted with Linux.

It is possible, currently there are a few exploits for older android devices that you could send via text, but I really doubt the person you are trying to hack has a 4-5 year old android phone lol, even if they do they probably have updated it. Another thing you can do is trick the victim into opening a "rat", which stands for remote administration tool. Basically depending on the rat you use, once the victim opens it on their device you can access calling, texting, browser, photos, have access to apps, and even remote controlling the device. I don't know any android rats I can personally recommend, but I'm pretty sure you can ask around.

Use AhMyth. I tested it on a 2017 Samsung model. Bind the ahmyth.s.apk with a popular game or something. Flappy Bird for example. As soon as they download and launch the game, you have your backdoor.

not with just a phone number that I know of.
assuming you can't RAT the device the only other option I know of is to get your hands on the email address, and it's password, tied to the phone, then tell the email to back up or sync or what have you contacts and media files, they also typically track and store location as well as browsing history.
