Probably one of the biggest thing which keeps us glued to these anime's are their beautiful OST.

Recently my favorite OST is Violet Evergarden's, it is full of emotional music that conveys whats happening in the show beautifully. The OP for the show is also amazing, I recommend you head over to YT and give it a look.
I would also like to mention that this is one of the most beautifully animated animes of 2018 as well.

Surprisingly no one has yet mentioned about Kimi No Na wa.
Honestly I believe it consists of the best OSTs of all time. Radwimps had rocked it out with amazing songs like zenzense and yumetarou.

Not an ost but Nevereverland by Nano who is known for making osts and so on for anime, btoom for example.

For Naruto, watching it as a kid i think there wasn't an OST that i didn't get fired up for, but for the others:
Death Note: L's OST (always knew shit was about to go down when i heard that one)
Bleach: Never Meant To Belong (always gets to my emotional side)
