I have a Nokia 5 running Android 8.1.0

older/budget phones have always been a pain when it comes to modifications, i looked around and it seems like you would most likely have to downgrade to an older version of android, unlock the bootloader, flash TWRP and then go about rooting. I am not sure what the exact requirements for your phone would be, take a look on xda developers and see if anyone has found a definite/better detailed work around.
keep in mind that if you mess up, your phone could end up being a shiny paperweight.
