How do i go about getting Dumps and website databases, sqli method once scanning with dorks? or mabey going for vps website hosts instead?
can someone please put me in the right direction here?

unfortunately I didn't understand What do you mean of right direction but There are a bunch of ways and bugs that consequences in dumping database. it depends on your goal

looking to dump database that hasnt been dumped already and also relevant to my needs such as jewlerry or shopping sites that are being used today

In my experience, if you're going for Google dorks, try files with php extension. If they ask for a variable parameter, there's a chance they might be vulnerable to SQLi.

you'll need a centralize list of what already been dumped
so whenever u have a new dump-able site, u check from the list
u can easily code the list using php / mysql / sqlite / or even just a text file
