GrapheneOS is a de-googled hardened OS, it improves the privacy and security of your phone and gives you additional mitigations against exploits and vulnerabilities.
It also gives you additional tools built-in for permissions etc but you can't use anything like MicroG or Gapps with your phone.
The only issue with it is you need a Google Pixel to actually use it, if you don't have a Google Pixel you can use LineageOS with a signed bootloader or just build your own Android Rom from the AOSP project.
