Yes, there are usually different sauces in the restaurants I go to and some of them are very delicious

Sometimes I feel like making a mix.
Sometimes I just stick to a single one, If I had to pick one above others I would probably pick Mayo.

It would have to be mayo all kinds of mayo. Tartar sauce. Perri perri mayo etc... OR CURRY! Yellow curry on potato is so good.

Obama's favourite dijon mustard is good with potatoes. I mostly eat them in a curry though.

Odd, never tired that. I usually use butter and lots of it. Also salt and pepper.
