Go fish. It's hard on PCs. Mobile devices are designed to be impossible to access remotely, and these platforms are used by billions of people. They are tested daily by people who are smarter than either of us, plus the next guy.

Hi, welcome to HF!
- Regardless of your target platform you can do MITB with BeEF and as far as I know it works in the latest iteration of Chrome.
- I haven't tested meterpreter APKs in nearly a decade but back in the day it was feasible.
- DeAuth tricks also work on mobile targets, as long as wifi is involved: https://hackforums.net/showthread.php?tid=6095729
- You can build your own app, code-sign it yourself, and use the Storage Access Framework. XCode has something for this, but I haven't tried it.
- If you want the high road you can social engineer someone into using AnyDesk for mobile.

Just want to add a few things:
- BeEF is detectable by antivirus and has been for years. Not sure if Safe Browsing blocks it, so it might work against a mobile device.
- Meterpreter Android payloads will get detected on Android, no question. Just like every other free RAT. APK crypters might work, but Google has been upping its security in a major way lately.
- Anydesk is not infeasible. Scammers use it.
