BTCpay server for bitcoin only
BitHide or MaxelPay for other crypto
All three have worked well for me in the past!

Does BTCPay hold the value in BTC (subject to fluctuations) or does it hold the value in the BTCPay wallet in USD/Euro?

It’s fully self-hosted. It holds the value in bitcoin.
Example: you get sent 0.001 BTC, you receive 0.001 BTC.
If you want to withdraw in FIAT, try something like NOWpayments

Thank you! I did contact NOWPayments a few weeks ago. I was wondering how they store the value of the crypto.
I will give it a try. Do you know if they hold the value in fiat or can convert the deposits into FIAT while keeping the funds on NowPayments?
