If you're looking for action and Sci-fi, you must take a look about Cyberpunk : Edge Runner. A captivating story of only 10 episodes. And if you want more classic action, there's Samurai Champloo which is very good in just 25 episodes

Steins;Gate, psycho pass, darker than black, parasyste, monster, Future Diary. These are some good ones I can think of off the top of my head.

Darker than black and the OG Full Metal Alchemist of 2003. Full Metal Alchemist is really good. After you watch the 2003 version, watch Full Metal Alchemist Brotherhood.
Brotherhood is a remake and more closely follows the finished Manga. I personally like how the anime studio steered the story and character development better than the Manga did.

There is this new anime revolving around astronomy in the medieval times, it came out last year that's surprisingly good and yet slept on.
It's called 'Orb: On the Movements of the Earth'.

For mind-bending plots, I'd 100% recommend for you to watch Death Note. It's extremely smart with many loopholes.
