Would bitcoin core be the only way to protect ones bitcoin when the first exchanges went online from hacking and other security concerns? Would it be considered a cold wallet and how well did it work?

Don't think I ever used bitcoin core because it had to download the entire blockchain and that was just a pain in the ass back in the day.

Then what cold wallet existed when the furst exchanges went online and many of them were having hacking/security issues? What could people do to protect their bitcoin?

Your question seems to indicated a lack of knowledge in multiple areas.
Bitcoin Core is Bitcoin's code. Without it there is no Bitcoin. Most wallets people use connect to Bitcoin Core nodes telling them their balance.
You can run Bitcoin Core in Pruned mode which can be as small as 550mb and a few days of the blockchain.
Bitcoin Core is secure. It's up to you to run it on a secured system though. These are not the same thing. It's like locking your car in the garage but you keep the garage door open.

So what options would there have been when the first exchanges came out as to avoid mt gox issues? Cold wallet or not?
