Would bitcoin core be the only way to protect ones bitcoin when the first exchanges went online from hacking and other security concerns? Would it be considered a cold wallet and how well did it work?

Your question seems to indicated a lack of knowledge in multiple areas.
Bitcoin Core is Bitcoin's code. Without it there is no Bitcoin. Most wallets people use connect to Bitcoin Core nodes telling them their balance. You can run Bitcoin Core in Pruned mode which can be as small as 550mb and a few days of the blockchain. Bitcoin Core is secure. It's up to you to run it on a secured system though. These are not the same thing. It's like locking your car in the garage but you keep the garage door open.

Has robertcarlyle aka juliareyes returned for round 3?
What's with the relentless fascination around 2009-2010 events? Learning more about the past can be an interesting journey, but you've been asking increasingly odd questions and hyper-fixate on some strange aspects of that time period.
