Any guide on the scope of social engineering? like how much information is good and what information is consider useless.

Honestly a guide should not be needed. All it is smooth talk and thinking on moment. Just put yourself in other person shoes and think what you have to hear before taking your word on it.

I couldn't have said it any better. After doing social engineering as a job, you just need to go with the flow, There isn't really a right or wrong way. Just find what works for you and go for it!
In terms of info, it really depends on what your end goal is/what are you trying to obtain? but Name, Address, DoB, email, contact number etc. would be the min you will need to gain any traction at the least if your main target is Sim Swaps, Broadband/TV providers, GOV, Employers etc.
But the world is your oyster and you need to find your own feet with something like this as it all comes from confidence, social skills etc etc.
