So let's say I wanted an offensive security job and a defensive security job. Would that be normal to have two part-time jobs, one offensive and one defensive one? Would that be an ideal way to make money? I heard people who are better at offense and defense are better at both.

Has anyone here found a part-time blue team job? What about a part-time red team job?

I'm not sure anyone would really know unless you told someone or they were in your steady life. But even so I sincerely doubt anyone would care that much. Maybe a joke or two sometime but it's basically what you make of it.
