AMD vs Intel for Home Server CPU

So I am gearing up to build a server for my home and I have been going back and forth on whether I should get AMD or Intel for my server build.

AMD obviously would be cheaper and I could get more cores/threads for cheaper that direction that Intel.

Trying to get some feedback though on if I should go the AMD route for cost reasons or if I should go Intel.

Purpose for server:
-NAS/File Server
-Test Game Servers (I am working on a few different projects with Unreal Engine and creating servers or them).
-Internal only webserver (for dev purposes only)

Planned on just building a Desktop and running ESXi or Windows Server 2016 (not sure which way I want to do it just yet).
If you are going to run ESXi, it is better to go with higher core count for Intel non-L type of CPUs. I think, E3-1240 (v?) or higher should suffice for your needs.
What is your budget for this? Sounds like you don't need much for this to be honest.

Ideally I'd like to be around the $800-$1000 range.

No graphics card needed of course, Ideally going to have 4x 4TB Drives and 1 ssd

I'd definitely be going with a Ryzen 1700 then for a home server. That might put you slightly over $1000 including your 4x4TB hard drives and a boot drive.
In the past, I have built a FreeNAS server using a hex-core chip from AMD. It offered great performance for my needs. If you are tight on budget, I would go with AMD.

If you can afford a litter more, I'd go with the Intel chip and Windows Server 2016, you will definitely get performance but more importantly stability, because of the ECC RAM.
I tend to prefer Intel.. Intel + nvida >> AMD

No video output is needed for a home server though.

Don't waste your money on buying Nvidia graphics card, servers don't require a dedicated GPU. In fact, most server motherboards will come with a built-in VGA video card, which is more than enough to help you manage your server locally.

Besides, servers can always be managed remotely via RDP or SSH.
To all people here saying that servers don't require dedicated graphics need to be more specific. ESXi is capable passing GPUs to clients through different mechanisms including direct access (passthrough) or distributed/shared. If OP wants to run GPU demanding applications, he will need a dedicated card.

I will not be needing a dedicated graphics card.
