I want to get as many information as possible from a person I know. He uses social media like Instagram and I want to get his account name. Is it possible to get his account name by sending him a link to a website which steals all his browser cookies? Or do I have to find a XSS vulnerability on for example Instagram first and then prepare a link to Instagram? I'm just curious.

No it is not possible!
You can't hack instagram. If you find a XXS vulnerability report it for bounty but I doubt you will.
You need to infect your target with a keylogger that sniffs cookies too.
