Generally one of the staff members can take it home, unless the place is a shithole, in which case management will force them to throw it away.

It's a really shitty practice, especially given how little restaurant employees are paid. It should be pretty easy to set up a system where people get the food they'd actually want, and it's spread out across all the staff.
