I know the basics of cheat engine and how to change my money but some games like Minecraft, when i change the amount of items i have it will go back to its original number. Or it wont even show the address at all. Is there anyway of bypassing this, if so let me know.

It's not that easy, the information is stored on the server, so you need to trick the server to let him know that the value has changed.

I think it's related to a notion called "trust the client" that is not allowed on games, for example :

Uhh, trying stuffs like cheat engine on server sided games ain't gonna work. Maybe trick the server by modifying the packets. Done that once in a MMORPG was kinda easy but afterwards it got fixed.

This sounds like from 2009 back then when Cheat Engine was still popular, what you need to learn is how to change values "in the server" and not "in the game application" so I guess that involves networking and databases. 🙃

The cheat engine can only modify local data, and data stored on the server does not seem to be modified
