Ingredients:
4 medium potatoes, thinly sliced (i used red)
1/2 medium onion, sliced into rings
1 diced jalapeno (or green pepper if you suck)
salt and ground black pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
½ teaspoon salt
1.5 cups milk
1 can of light beer or ale
1 ½ cups shredded Cheddar cheese (i used a mix of white and yellow)
Step 1: Layer them
Layer half the potatoes, onions and jalapeno...then season. Repeat with second half of tators, onions and jalapeno.

Step 2: Make sauce
Melt your butter on medium low, stir in flour and whisk, make a light blonde-ish roux. Then add your milk and beer slowly while whisking. When it thickens start slowly adding your cheese until you get a fondue type thing.

Step 3: Bake that shit
Pour your mixture over your tators and cover with tin foil. Bake at 400 for 1.5 hours or so. Then remove foil and broil for 5-7 minutes.
