why do people grief small servers that don't have a chance.

Because most big servers have protection and really arnent worth trying Rather then going to a new server looking for staff and getting them to install a poison plugin

Because people are entertained when they grief.
Small servers are usually single-handed users that are beginners, and therefore it's much easier to grief, without all the server protection that's usually provided on large servers.

but more important is how new the server is. newer servers are more attractive for griefers

It's most likely due to the fact that bigger servers have protections and backup, some people are very malicious and would like to destroy all your hard work and effort.
