I found a website that lists a bunch of sites to take surveys, such as ones run by the Nielsen company, etc.

The problem is, a lot of these sites (mainly the ones with bigger payout) require you to be over 18 to participate.

Do they have some way of confirming if you're actually 18, or am I safe to sign up and just link my PayPal?

Most survey sites are a scam thou- your better off with the most commonly known once , but the payout is very small
unless you have referrals.

Yeah I have a verified paypal. How much do you make with ProBux, what are the cashout conditions, etc?
