Is the target machine on your network? If so, I suggest you try:

• Remote Exploitation - You can use Metasploit for this, however this only really works on unpatched systems.
  


• Man In The Middle - Ettercap is a nice tool for this job.
  

Otherwise, you should try:

• Social Engineering - Basically this requires a RAT (you can find one here) and a crypter (you can find these here and here), you'll basically be attempting to trick the target into installing your RAT server.

Well a RAT would be the best for your case, and to bypass his anti-virus you can get a crypter on here farely cheap, of course there is better options but from the looks of it you don't know much.
