Just wondering if anyone here knows of a way to bypass Verizon's 600kps limit on the mobile hotspot or tethering. Im not rooted and am using a galaxy s8+

This is sorting controlled on the account end at the isp so No you can trick it or make the system see less or more then what it has (revive and send) as a hole it's point of of checksum and accounting for all data transmissions

Not sure how Android works, but I was in the exact same situation as you so I had to JB'd my iPhone.

Download the tethering app, and finally I was able to tether to my Macbook with no data cap ;)

I bought the Foxfi/PDA net app and its allowing me to tether still looking for hotspot though
