Here's some of my favorite books todo with Vehicle Hacking or Manipulation. First off 'The Car Hackers Handbook' this is my goto for anyone wanting to learn anything todo with Vehicle Networks.
This book outlines the very basics to advanced examples that different security manufacturers use and outlines attacks people have used. This also list 'tools of the trade' and many other helpful tools you could use to Penitration test. I'd highly suggest purchasing a hard copy. This is some of my absolute favourite reads but I have plenty more if you're interested.

Automatic Reverse Engineering of CAN Bus Data Using Machine Learning Techniques.
