Basically, a large part of my day is spending an hour or so in a room with hundreds of people all using mobile data. If there are any ways to have a look at any of the traffic, I think I could have a bit of fun. Don't know how possible this is, so thought I'd at least ask.

It's very hard to do that. An alternate possibility is to make a Fake WiFi network named Free WiFi and name it to the location where you are at with those hundred people. Then you can look at the traffic. That is the easiest way I'm sure.

Sorry bud, you need to try and convince them to join the open "free network" and you can collect the traffic from there.
