I'm not a big fan of watching things that are still airing for a simple reason.... I binge watch, waiting a week for an episode just kills me.

Please don't recommend the main stream shit like Naruto or w/e, anything that's more than 50 episodes is 99.999% out of question. Only exception would be something that has barely any fillers, always exciting, and you'd rather shit your pants than take a toilet break from watching (might ask for proof🙃).
Ideally something that's like 1~2 seasons with total of around 24 episodes.
Comedy, Magic, Mystery categories are my favorite I think.

I think it might fit your taste though its only 1 season. Cautious Hero: The Hero Is Overpowered but Overly Cautious.
Its hilarious, only 12 episodes and has a good little twist One of my favorites.

No problem. Show is heavily satire, making fun of isekai but its story and jokes
are pretty funny. Some stuff can be cringy to some, but its worth finishing for sure.

I'm surprised you haven't seen Grand Blue, Majou de Oyasumi, Baccano or Hamefura (Otome Game no Hametsu Flag shika Nai Akuyaku Reijou ni Tensei shiteshimatta...) is the full name, those would be my top recommendations tbh

I'm considering Monogatari but I'm lost on where to start from. As for Jojo, I think it's overrated, watched an episode and didn't like it at all.

With Monogatari it’s best to just watch it in the order it aired. For some reason a bunch of nerds made some different “watch order” lists but if that’s how the author wanted the show to be experienced that’s the best way to watch it imo. Jojo is pretty overrated but still really good, it’s not for everyone though so that’s understandable

Samething with Haruhi, always watch in airing order.
But I wouldn't say "weird reasons" airing order isn't chronologically accurate.

This is a solid list for sure from Soulmate if you havent seen a majority of these OP.
Also ill vouch for Black Lagoon that's one of my favorites.
Fate /Zero is a pretty interesting series I'd recommend.
