I need insight as to how this man is able to stalk track and hack into this lady's privacy, it seems almost impossible, though as mention in the post, he has a masters in CompSci, still I find it hard to believe this guy is capable of such things, the things she's mentioned of him doing to her is almost magical. Is it even possible?

Reading between the lines, I'd lean towards poor opsec by OP being the main vulnerability.

Public display of gmail/ios account, via (often 3rd party) linked services, allows for repeated tracking of latest associated email accounts.

Lack of 2FA potentially.

Replacing the same/similar vulnerable handset models.

Scheduled scraping, mitm-filter/URL-redir.

So imo, using soceng and mitm. Any physical access would obviously be ideal, but reads as unlikely imo.

Is all of this possible, executed by Captain CompSci alone? Sure. Time and $ give multiplier bonuses 😅

OP likely needs to isolate all their shit, collate and recover data, fresh OS. Booting a suitable vm workspace would help.
