Hi im new to hacking etc but any one know how to avoid whitelist on 1 18 server

Not possible to do unless you have server/console access to add yourself to the whitelist, disable the whitelist.

Can backdoor the server with a plugin, or somehow gain operator permissions.

It's a game server, you can't just bypass it.
