As for being AI proof, the riddles are slightly vague simple riddles meaning there are a few possible answers usually.

Each day the user receives a new riddle. Really the time it takes them to get the first answer isn't important but on the twelve day... this is where the real speed of cracking the seed happens. I suggest to most users to pick a couple of answers for each riddle.

I don't think I can make it completely AI proof but im sure AI can be useful in suggesting a few answers each riddle could be.
