For me, STALKER GAMMA has to be pretty high up there. Between the atmosphere, survival mechanics, and how unpredictable things can get, it's pretty easy to get lost in the game for hours.

Curious what games you guys would consider the most immersive you've played?

Yeah, if you can fly a drone in real life, you can in the game. Vice versa.
