I can't see why not. You would need a different server (I guess) to bounce your local channels off but yeah give it a shot!

Do you use the satellite EPG or the internet based one? I use the satellite one and it's always worked fine :)

The satellite one for me doesn't display past the first two things that's playing is there any way to get 7day epg?

This should give you an idea of the work involved in setting one up. You can buy a sky dish and lnb from eBay US. Then it'll just need setting up and pointing the right way using a satellite finder :)

28.2E can not be picked up in the USA, but if you really are interested in getting into this then don't go for a sky mini dish as this is just too small try a Triax dish or even better motorised.

A motorised setup will give you the benefit of picking up a lot of satellite worldwide and US based. It will cost a bit but for the long term, it is great.

USA servers, I have not seen/heard of personally myself but you can get non-uk server. As you are US based it is probably even better going down the cable route, some non-UK servers are private and only deal in the country. If you do know your local satellite/s let me know i can check it out.

As for the box, Openbox/Skybox/Libertview (Have many names as they are easily cloned in china) is a very basic closed-source, and if going down the motorised route then an Enigma 2 (E2) box such as Dreambox, Vu+, Amiko, Weetek etc. will be best suited as the are Linux based but you can pick up clones for these too.

Weetek can can also handle Kodi, which is good if you don't want a satellite connection.
