Shoot me some unique ideas for concepts/tech/ideas that can be implemented with blockchain and its own technology - If I like it and use it I will reward you $100 and potentially offer you an advisor position if interested :)

Million (Billion) dollar question here.
Honestly, go look at some failed ICO's, look at their goals and see if you can actually achieve their goals in a different way.
Check out the vague whitepapers and see if you can make their idea(or part of it) a reality.
Try and look objectively at their end goal to see what you can do to enhance it. This is the great thing about the space, the evolution of ideas is completely natural and necessary.
Crowd funding using smart contracts, this could easily be implemented on top of ETH/NEO.
Have a cool signature? hit me up and I might use it.
I think there are more than a few great concepts inside existing whitepapers. But I think you want something more original. That's going to be tough since a lot of smart people are already involved in cryptos.
One thing I would want to do if I was you is to figure out how you can simplify the blockchain for the average person. Figure out a service you can provide that will expand the base of users.

It can as easy as a learning experience in a game powered by an ERC20 token, I've thought about this route just wasn't really interested in it as I know of a few companies working on something alike already :)
Also for blockchain to be adaptable to the average joe we need more real world use cases and implementation by companies :(

Esport use - somehow; considering the popularity it is currently receiving and will continue to receive.
However, for my personal thoughts I think infrastructure improvements ought to be the first logical step into 'more real world use cases and implementation by companies', else it is futile to considering the gold rush of like-minded people such as yourself that it is bringing into the space. Simplicity and practicality first.
EDIT:
To expand on infrastructure needs, payment processing for merchants rather than a debit card loaded with an asset or currency.
In solidarity.

How would I implement a coin with eSports though?

Unsure, just an idea you're the one wanting to pursue it. Wagering, statistics, matchups, I wouldn't really have any idea. However, it could be a space that could utilise it.
In solidarity.
