I have heard of some people using blank/custom programmed NFC chips on ATM's to inject malware and trick the dispenser to put out money, and I was wondering if there was a way to inject this malware from my iPhone NFC chip (iPhone 7, it definitely has NFC because it can use Apple Pay).

Well, you heard bullshit.
Moreover, if by any chance anyone would know something (more realistic) - they probably wouldn't help for free nor re-guide you to use it on your iPhone 7

no one will never tell you for free and in a public forum full of leakers and lamers how to do something like that, otherwise the method would get patched and fixed in less then a day by ATM factories and personal of banking security.

Anyway it's already patched unfortunately.
