Dual (medium) graphics cards or a single (good) graphics card

Hey there, I'm looking to upgrade my graphics card since mine is fairly old now, I was wondering whether or not I should buy 2 medium ones, or whether I should go for a good one to run by itself?
Could anyone recommend some cards that go well together or are good for gaming, I like playing some of the latest games (e.g. The witcher 3) would like to be able run the games at a decent quality for the next 2-3 years.
My current build is:
Motherboard: Asus P8Z68 PRO
CPU: Intel i5 2500k
Memory: 8GB ddr3
Graphics card: AMD Radeon HD 7850
Using 2 monitors, normally one has chrome/Firefox open the other running another application such as spotify.
Any help would be appreciated thanks! :)
Keep in mind, when choosing one single strong graphics card and possibly a motherboard that supports SLi/CrossFireX, you have a cheaper option to upgrade later on. If you have two medium graphic-cards and later on want to upgrade, you have to sell those two medium GPUs and decide whether you want one or two higher-tier GPUs. When having one single strong GPU to start with, you only have to buy another one when wanting to upgrade.

Also, there's more problems with SLI than with just running one GPU.
What power supply do you have?

A good strong one over 2 weaker ones.
Uses less power, no SLI/CF issues.
Human stupidity : Buying something they have no clue about, and then ask if they wasted their money.
