Most professors do not practice the field in which they have an expertise. They understand the theories when explained to them but are not actively seeking new things to further their field.
Take Psychology for an example. My psychology professor used to do clinical work as a therapist but for the last 8 to 10 years has been teaching psychology. Psychologists conduct and experiment with new studies or Hypothesis everyday, however it is not the professor's duty to research and collect data on their field of study. With everyone having different thoughts, more and more new ideas emerge.
