1000-1200$ PC build

It's been a solid minute. With word of a stimmy check coming I wanna be prepped for a build so I can help a friend build hers. Kind of out of the loop right now so...
Yeah, something like a 1000-1200 USD budget not counting monitor/keyboard/mouse/OS. Just straight build.
Mostly gonna be used for light gaming/streaming and schoolwork from what I gather.

Edit: I might just slot in a 960 I have laying around for her GPU due to the current GPU prices. But even so, I'd like recommendations for a GPU to replace it with once prices normalize.

Thanks in advance :)
Here is the current build that I'm using..
Note that the 1660Ti Gaming X was NOT $598.xx when I built my rig, and you can more than likely 9 times out of 10 find it for way less than advertised pricing.

CPU: AMD Ryzen 5 2600X 3.6 GHz 6-Core Processor ($197.95 @ Amazon)
CPU Cooler: NZXT Kraken X53 73.11 CFM Liquid CPU Cooler ($119.99 @ Newegg)
Motherboard: Asus TUF GAMING X570-PLUS (WI-FI) ATX AM4 Motherboard ($189.99 @ B&H)
Memory: Corsair Vengeance RGB Pro 16 GB (2 x 8 GB) DDR4-3200 CL16 Memory ($94.99 @ Amazon)
Video Card: MSI GeForce GTX 1660 Ti 6 GB GAMING X Video Card ($598.89 @ Amazon) <-- DISREGARD
Case: Cooler Master MasterBox TD500 Mesh White w/ Controller ATX Mid Tower Case ($99.99 @ Amazon)
Power Supply: Thermaltake Smart 700 W 80+ Certified ATX Power Supply ($69.98 @ Amazon)
Total: $1371.78
I would recommend looking for used GPUs locally, but the 960 should work until you find one.
Didn't go with a Ryzen 5000 CPU because they're pretty hard to find. 3600 is still a solid CPU that's in stock.

If I had to choose a GPU. What would you recommend? Pretty sure I could fine a 2070 super or something around my area. Sucks that the crypto craze again has jacked up prices as much as they have.

I purchased this pc I have 0 issues with it and you get a year warranty, Plays all game on ultra settings+water cooled and not bad for the price.

2070 Super is a solid card if you can grab one.
Other options would be 5700 XT, 1660 Super, 1660 Ti.
