So, this is something that happened because my fiancé wanted to know what Hominy was like...
The recipe can be adjusted and modified about as easily as the ingredients in a taco can.
Small batch version:
1 pound of ground beef, browned and seasoned as per instructions on taco seasoning package
1 30oz can of hominy, drained
1/2 cup shredded cheese
- Optional -
1/4 cup diced onion
1/2 cup diced tomato
etc...
mix the meat, hominy, and cheese (plus optional ingredients) and pour it into a loaf pan (or larger baking dish if you're scaling up the recipe)
Bake at 350 (f) for about 30-45 minutes (it's already cooked, you're just getting it hot and melting the cheese)
Pull out of the oven and serve.
You can add shredded lettuce, salsa, and/or sour cream AFTER baking if you like.
