An Ethereum mining rig would be more profitable than a multiple CPU rig for Monero. What's common with Ethereum miners is utilizing the CPU to mine Monero since it's more or less unused.

Determining if electricity costs in your area are low enough to make it profitable and finding GPUs for a reasonable price is what you should look into.

Kind of a null point when there will always be another profitable coin to GPU mine.

Full PoS for Ethereum is still years away. It will be a hybrid of PoS/PoW for a while until the 2.0 chain is completely merged.
