I have an ASUS H81M PLUS Motherboard with an Intel Core i3 4170 processor, but I'm in the process of looking to upgrade the processor as it only has 2 cores.

I have an EVGA GTX 1050Ti 4GB GPU and 8GB of DDR3 1600MHz RAM.

The 2 processors I've seen are the Intel Core i7 4790 or Intel Xeon E3-1231 v3.

Which one is best in terms of gaming?

I'll probably be upgrading the RAM to 16GB and the GPU a couple of months down the line.

As I told you in your other thread.... they are basically the same except the Xeon doesn't have the iGPU and is priced as an i5-4690.
